- All-purpose and bread flours should be stored in airtight containers in a cool, dry place. Store whole-grain flours in airtight containers in the refrigerator or freezer to prevent them from becoming rancid, as they contain fat.
- Keep olive oil and butter in the refrigerator, as they too may become rancid at room temperature. Oil will return to liquid at room temperature.
- Milk, buttermilk, sour cream, yogurt and eggs all need to be refrigerated until time to use them.
- Unopened packages of dry yeast can be stored at room temperature. Since yeast is very perishable when exposed to air, moisture and/or warmth, all opened packages of yeast must be refrigerated or frozen in an airtight container. Under refrigeration, the life of yeast is about four months, and when frozen, six months.
