This recipe makes Two 12-inch pizzas
|Vegetable Oil||3 TBSP|
|Rice Flour||2 cup|
|Tapioca Flour||1 cup|
|Arrowroot Flour||1 cup|
|Non-fat Dry Milk||1/2 cup|
|Xanthan Gum||1 TBSP|
|Active Dry Yeast||2+1/4 tsp|
|Your favorite toppings|
Bread Machine Method
1. Be sure that all ingredients are at room temperature.
2. Combine the wet ingredients and pour them into the bread machine pan.
3. Excluding your toppings, measure the dry ingredients, including the yeast, and mix thoroughly.
4. Add them to the pan.
5. Place the pan in the bread machine.
6. Select the Dough cycle and press START.
When the kneading is complete, press STOP on your control panel to clean the machine.
Pizza dough should not rise in the machine.
Generally grease two pizza pans or cookie sheets. Remove the dough from the bread machine pan to the pizza pans, diving it in half to form the two crusts. Grease your fingers, and spread the dough evenly, making sure it reaches into the corners of the pan. Top the pizza with your favorite sauce and toppings.
Bake in preheated 400ºF oven for approximately 20 minutes. Pizza is done when the bottom of the crust is a light golden brown and the sides have pulled away from the pan.

NOTE: You can substitute Instant (Quick Rise) in place of Active Dry Yeast in gluten free recipes. When using Instant Yeast, expect your batter/dough to rise faster - about 50% faster. Adjust your rise times accordingly. Traditional methods: substitute equal amounts; Bread Machine: use 1/2 tsp Instant Yeast OR 3/4 tsp Active Dry Yeast per cup of flour in your recipe.
