RED STAR® Active Dry Yeast
RED STAR® Active Dry Yeast is cake yeast in a semi-dormant state. The drying process in its manufacture, reduces moisture content to about 7%, giving it a longer shelf life than cake yeast. When rehydrated, it provides ultimate baking activity in all yeast dough, low sugar to highly sweetened breads.
RED STAR® Active Dry Yeast is available in strips of three 1/4 -ounce packets and in 4-ounce jars. One 1/4 -ounce packet of active dry yeast is equal in activity to one 0.6-ounce cake of yeast. Three 1/4 -ounce packets are equal in activity to one 2-ounce cake of yeast. A 1/4 -ounce packet of active dry yeast contains approximately 2-1/2 teaspoons; the measurement will not be exact as yeast is packaged according to weight rather than volume. A packet of yeast is sufficient to raise 4 cups, approximately 1-pound, of flour.
For traditional baking, Active Dry Yeast may be hydrated in 110°-115°F liquids or mixed with other dry ingredients if liquids are heated to 120° to 130°F. To use Active Dry Yeast in a bread machine, use 3/4 teaspoon of yeast for each cup of flour and have liquids at 80°F liquids. Active dry yeast is not recommended for use on one-hour or less bread machine cycles.

RED STAR® QUICK·RISE Yeast
QUICK-RISE Yeast is an instant yeast dried at a lower temperature than Active Dry Yeast. This process creates a fast acting yeast so vigorous it can shorten the rising time in traditional baking as much as 50%. QUICK-RISE is available in 1/4-ounce packets with three packets to a strip.
For traditional baking, QUICK·RISE Yeast can be mixed with dry ingredients and liquids heated to 120° to 130° F or dissolved in 110° -115° F liquid before adding it with the other ingredients. A packet of QUICK-RISE is sufficient to raise 4 cups, approximately 1-pound, of flour.
For bread machine baking on regular cycles, use teaspoon 1/2 QUICK·RISE Yeast for each cup of flour and 80° F liquids. For one-hour bread machine cycles, yeast amounts must be doubled or tripled; suggested liquid temperatures vary with machines.

RED STAR® Bread Machine Yeast
RED STAR® Bread Machine Yeast is a fast acting yeast with excellent performance in bread machines. Ascorbic acid, a dough conditioner, is added to help dough stretch easily.
RED STAR® Bread Machine Yeast is available in 4-ounce jars. For bread machine baking on regular cycles, use 1/2 teaspoon Bread Machine Yeast for each cup of flour and 80° F liquids. For one-hour bread machine cycles, yeast amounts must be doubled or tripled; suggested liquid temperatures vary with machines.
Bread Machine Yeast can be used for traditional baking as a fast acting yeast. When mixed with dry ingredients, heat liquids to 120° to 130°F. To hydrate before combining with other ingredients, use 110° -115° F liquids. For traditional baking, 2 teaspoons Bread Machine Yeast is sufficient to raise 4 cups, approximately 1-pound, flour.

RED STAR® Cake Yeast
Cake yeast, also known as wet yeast and compressed yeast, has been used for decades by veteran bakers and is still popular today. Cake yeast is very versatile and performs well in all yeast dough recipes, including use in bread machines. In its manufacture, excess water is pressed out of yeast cream, forming cakes with about 70% moisture content. Cake yeast is very perishable, requiring constant refrigeration at 35° to 38°F to retain its freshness and activity. We recommend using it within 10 days of purchase.
RED STAR® Cake Yeast is available in 0.6-ounce and 2-ounce foil-wrapped cakes. For traditional baking, dissolve cake yeast in warm (90°-95°F) liquids. A 0.6-ounce cake will easily rise up to 4 cups, approximately 1-pound of flour. A 2-ounce cake is adequate for 12 cups of flour. For bread machine use on regular cycles, use 80°F liquids and 0.6-ounce cake yeast with 3-cups flour. Cake yeast is not recommended for use on one-hour or less bread machine cycles.
