Taco Bake

A different twist on tacos - baked in a pie pan. Crushed corn chips add flavor and chewiness to the yeast crust. Serve wedges topped with cheese, lettuce, and tomatoes.

Makes 1 taco pie.
Water 2/3 cup
Oil 2 tablespoons
Onions, finely chopped 2 teaspoons
Sugar 1 tablespoon
Salt 3/4 teaspoon
Corn chips, coarsely crushed 1/2 cup
Bread flour 2 cups
RED STAR® Active Dry Yeast 2 1/4 teaspoons
Meat Filling
Lean ground beef 1 pound
Onions, chopped 1/2 cup
Taco seasoning 1 package
Water 3/4 cup
Topping
Cheddar cheese, shredded 1 cup
Lettuce, shredded 1 cup
Tomatoes, chopped 1 1/2 cups

Bread Machine Method

Have liquid ingredients at 80º F and all others at room temperature. Place crust ingredients in pan in the order specified in your owner’s manual. Select dough/manual cycle. Check dough consistency after 5 minutes of kneading, making adjustments if necessary.

Mixer Methods

To make crust, combine yeast, 1 cup flour, and other dry ingredients. Combine liquids and heat to 120 to 130º F.

Hand-Held Mixer Method - Combine dry mixture and liquid ingredients in mixing bowl on low speed. Beat 2 to 3 minutes on medium speed. By hand, stir in enough remaining flour to make a firm dough. Knead on floured surface 5 to 7 minutes or until smooth and elastic. Use additional flour if necessary.

Stand Mixer Method - Combine dry mixture and liquid ingredients in mixing bowl with paddle or beaters for 4 minutes on medium speed. Gradually add remaining flour and knead with dough hook(s) 5 to 7 minutes until smooth and elastic.


Food Processor Method

Put dry mixture in processing bowl with steel blade. While motor is running, add liquid ingredients. Process until mixed. Continue processing, adding remaining flour until dough forms a ball.


Rising, Shaping, and Baking

Place dough in lightly oiled bowl and turn to grease top. Cover; let rise until dough tests ripe. Place dough in a well-greased 10-inch pie pan. (A deep dish pie pan or quiche pan may also be used.) Let rise 10 minutes. Prepare Meat Filling by browning ground beef with onions. Drain; add taco seasoning and water. Simmer 10 minutes. Spread meat filling over crust. Bake in preheated 375º F oven for 30 to 35 minutes or until edge is crisp and golden brown. Sprinkle with cheese, lettuce, and tomatoes. Serve immediately.
